Mashed cauliflower with butter beans recipe – super easy to make in only 20 minutes. A healthy side dish that tastes amazing! Gluten free & vegan option

Does this look like mashed potatoes to you? I think it does, but it’s not mashed potatoes! Today we are sharing with you a mashed cauliflower recipe. The taste and look is actually quite similar to mashed potatoes. But it’s lighter and has a different nutritional profile. For example, cauliflower contains way more vitamin C than potatoes and some folate and vitamin K, nutrients not present in significant amounts in potatoes.

If your kids like mashed potatoes, they will most probably also like this mashed cauliflower. It has a really mild taste and goes as a side dish perfectly with meatballs, these hidden veggie meatloaf muffins, or these sweet potato balls if you are looking for a vegetarian dish.

I added butter beans to the mashed cauliflower to make it more filling and to add some more nutrients to it. Butter beans are high in dietary fiber, copper and magnese. So they nicely complement the cauliflower.

It doesn’t take more than 20 minutes to make this mashed cauliflower. And it’s super easy, anyone can do it! All you have to do is cook the cauliflower, drain, add rest of the ingredients and process with a blender. And there you have it, a side dish that tastes amazing!

  • 800 g/ 28 oz cauliflower
  • 1 vegetable stock cube
  • water
  • 1 can (400 g/ 14 oz) butter beans
  • 2 tbsp butter or olive oil
  • salt, white pepper and garlic powder according to taste
  • chives


  1. Separate cauliflower into florets and cut in smaller chunks.
  2. Put cauliflower and vegetable stock cube in a pot and add enough cold water to cover the vegetables. Cover with a lid and bring to a boil. Reduce heat to low and cook for about 10 minutes or until cauliflower is fork tender, then drain.
  3. Add butter beans and butter or olive oil. Using a hand blender, process until smooth. Add salt, white pepper and garlic powder according to taste, blend with a spoon and adjust if necessary.
  4. Garnish with chives and serve hot.
